Expect dishes such as blueberry granola pancakes and house corned beef hash at breakfast, the Big Boy burger at lunch, and entrees and shareable plates at dinner, such as charred octopus with romesco sauce. Proof Pizza, the lunch-and-dinner features Neapolitan-style pizzas that bake in less than two minutes in an 800-degree brick oven. The pizza dough will be allowed to rise, or proof, for 48 hours to develop its flavor. Also on its menu: Italian-style pocket sandwiches, salads, antipasti and desserts. It has wine and imported and domestic craft beers. The Bar, off the hotel lobby, displays a collection of art, including beer-can art. It's intended as the main gathering area. During the day, workers can sit with a laptop or gather for meetings; besides cocktails, it offers a true coffee experience, fresh pressed juices, and house-made pastries. At night, DJs and other artists perform. Giggly Champagne & Wine Bar on the second floor will have views of Kilbourn and Water. Featuring sparkling wines by the glass and bottle, and also will have beer, cocktails incorporating sparkling wine, nonalcoholic drinks, snacks and desserts.
